Shuko you should expect more variety and the charcoal-grilled salmon, wow. The sake pairing at Nakazawa is incredible though, and will come out to a similar price to Shuko sans alcohol, if that's a consideration. One good thing is 30 is young, so you have a lot of time to try both!! IME, they'll both blow you away.
